Master of Meat: Introducing…

El Perro Negro baby!  If you don’t know about him already, I’m about to rock your world sweetcheeks…

First up, a wee bit from the big man himself…

‘I’ve always played about in the kitchen trying different stuff out and tried loads of different burger recipes, combinations, cooking methods etc.  The “Top Dog” was the first commercial burger and it went out in 2014, the idea firstly was to create a real “luxury” burger using premium ingredients all the way through and deliver it in a way that people wouldn’t be too afraid to try. I was lucky enough to be given a break by Danny aka the Mad Chef at Bloc and the rest is history now, its just gone from strength to strength.’

Last week, my Tinder Bae and I went for our burger fix in Brew Dog on Argyle Street for the El Perro Negro pop up.  I go to these on the regular as I cannot stress enough just HOW good these burgers are.  So if you’re looking for somewhere amazing to go for your burger fix, keep an eye out for his upcoming pop ups, I guarantee that you won’t be disappointed.

I’ve tried the Top Dog and The NYC before and they blew my mind.  The Cult however was a newbie for me.  Since the burgers are so good, we decided to just get all 3 and share them so we could get a wee bash at everything : ) and let me tell ya, it was the best decision we’ve ever made.

First up….the new kid…..The Cult.

This bad boy intrigued me.  The kimchi comes directly from Kimchi Cult- a new Korean takeaway on Chancellor Street, Glasgow- post on them coming soon!  The mix of the kimchi and sriracha made me think it was gonna blow my face off (I’m not super brilliant with spicy food), but the Dogfish Head hop pickles rounded the spice out so well.  Now, I’m not a HUGE fan of pickles (Yes, I’m the girl that dismantles my Big Mac to get them out because I can’t be arsed waiting the extra 10 mins to get a fresh one) BUT, El Perro Negro crafts his burgers so exquisitely that every flavour comes together in what can only be described as a face orgasm.  I’m really not joking.

‘Nothing is an afterthought and I wont compromise on the quality of my ingredients; the beef I use is slow grown, responsibly reared dry aged meat. I will use premium ingredients such as black truffle for example but will always aim to ensure it compliments the burger, not overpower it, and a little goes a long way.’

The burger literally crumbles and melts in your mouth, its the perfect amount of messy and the balance of the sweet pickles and the hot sauce are perfection..one for those who want a little bang for their buck but it wont boot your balls off (metaphorically if you’re a girl) with spiciness.  I literally can NOT wait to have this in my mouth again.

Next up is my old friend….the Top Dog.

I first tried this burger about a year ago and I remember EVERY detail.  I HATE bacon on a burger (I know, weirdo) but somehow, SOMEHOW El Perro Negro has a way of making me go against my own tastebuds… I’ll pretty much eat anything this guy puts in front of me. For reals.

This is Marc’s fave and I don’t blame him.  The bone marrow and roquefort butter, the caramelised onions and the black truffle mayo make this wee belter a force to be reckoned with.  It’s sweet, its meaty, it’s excellent.  It’s really effing excellent.

Last but DEFINITELY not least, is my one, my only, my ultimate Burger Bae….behold bitches, it’s The NYC…

To me, this burger is the epitomy of burgers.  If Ryan Gosling was a burger, he’d be The NYC.  I am a huge pastrami fan.  Wrap anything up in that shiz and I’ll be all over it.  From my first bite of The NYC on Marc and I’s 3rd date I knew I was in love (with the burger, obvz).   This burger I’d say is the most modest in its ingredients- its pastrami, swiss cheese, bone marrow butter, dill pickle and mustard and holy shitballs it makes my heart sing.

Genuinely, The NYC is without a shadow of a doubt the best burger I have ever had the pleasure of eating.  Anyone who knows me, knows I am an absolute burger fiend and I have to hand it to El Perro Negro for this absolute masterpiece of meat. I’m swooning about it just writing these words man.  This burger is LIFE.

When I asked him about what sets him apart in Glasgow’s ever growing burger market…

‘I wouldn’t say I was different, just been very fortunate, had the right breaks at the right time, have managed to develop a great working relationship with my suppliers and had some great advice from people in the industry. Whilst I do a bit of grandstanding on social media I genuinely don’t believe my “hype”, im always looking to learn more and improve on what im doing.’

Bellies full, (a pathetic attempt on the fries I must admit- but they were also DELISH) we rolled on out of Brewdog happy and very much in need of a nap.
